So I picked up some Chuck roasts today and figured I would cook 2 of them as 1 for chili and the other for some Sammie's I can enjoy. The wife hasn't tried so shess not really sure of it lol but I seasoned them up with SPGO and let them sit for a couple hours in fridge and about an hour before I put them in the smoker I sat them out on counter. I got the Red Box a rolling at about 250 and snoks going good. I'm about 2 hours in now and I'll update as I go along.

I'll update as I can I'm cooking chili in the morning for tomorrow nights delicious dinner.


Edit::::
It's now 8pm and I'm just over 3 1/2hrs into it. I have one Chuckie that was being really good and I wrapped it right at 159 to finish it to 190 for the chili tomorrow.. the other one I it stalled early and wouldn't move for 45mins at 147 so I made some beef broth and some BBQ rub I have and put it in a pan for finishing to 180 degree for Sammies. I hope it turns out good but here are some pics of it so far

added a quarter cup of beef broth just to try it out in it that's what's in the kids bowl next to it..

Appreciate it. it turned out awesome in my Sandwich. I pulled it a little to early but here are the pics of it before it goes on to my Sandwich ..

all sliced up but its a hair tough my thermometer in smoker for the meat was off today but it still tasted amazing the ajus on the side. It had mustard, mayo, pickles, and mozzarella cheese with a few slices. I might have cut it wrong as well but hey it's a learning experience

the first chuckie came out right at 195 perfect for delicious chili tomorrow. It's wrapped up and in the fridge awaiting tomorrow

Looking forward to the chili. I prefer pulling the chuckies for sammiches give it a try if you haven’t.

I'll try that next time. This is my first try at ever doing Chuckies and so far I'm in love with them lol easy and pretty fast to cook up for dinner
