Hey;

It's me again.

I read the piece on Smoking Brisket with great interest.

I cook on our Charcoal Grill every chance I can get.
Even in the winter.

Now I startâ€[emoji]8482[/emoji]n to smoke.

Because of our “Tailgate Party†at last years VBS (Vacation Bible School),
I was volunteered to Smoke some pork for this years VBS.
I had my Char-Grill on the back of a trailer.
Actually, I was the only one with a grill.
To me itâ€[emoji]8482[/emoji]s large for a charcoal grill, The cast iron cooking surface is 19â€x29†(551 sq inches)

This coming year itâ€[emoji]8482[/emoji]s a Hawaiian theme starting with a Luau.

Initial estimate is about 400 people.

How much meat do we need to feed that many folks?????

I planned on borrowing my wife's cousin's monster tow-propane-smoker.
And
Enlisting lots of help.

It may have to be scaled Way back due to the cost of the meat.

I'd figure at least a half pound per person, that's if you're serving sides as well. You're looking at alot-o-meat bubba! I have a CharGriller, and I can squeeze six roasts on it (depending on size). Figure each butt roast is about 8 pounds... that's only 48 pounds of meat per load. Plus, you are gonna need ALOT of charcoal and wood chunks... and alot of time.

You're gonna need a bigger boat...

Or, if you have enough time, do the smokes in shifts ahead of time... do a load, then freeze. Following weekend, do another load, then freeze... etc. When you get it all done and frozen, then muster up the whole church to bring every crock pot they have to heat it all up.

It can be done... but slowly...
 
All depends on how much meat you are planning for person. I would probably go with 1/3 lb per person since I assume there will be sides and other food......so 120 lbs cooked. If you do butts, you can plan on losing about 40% of the raw weight due to bone, fat, & shrinkage from the cooking (not because it is cold out

)......so approx. 190 lbs of raw meat if my math is fairly close..........24 average (8lb) butts should cover you.

You could maybe even scale that back some depending on the make up of the group. If out of the 400, 300 are women and children, 1/3 lb might be a high estimate. 400 Truck drivers then you would want to up it.

Sounds very doable...........don't let the 400 people number intimidate you...........yeah, easy for me to say. LOL

on edit..........what Debit said....a couple of dozen butts worth. LOL

It's very do'able...
I've found folks in my church with vast experience.
So, maybe all I have to do is be the Go-To-Guy.

Now, It all boils down to is cost.
