Have a batch of beef marinated and sliced for jerky. The question is dehydrator at 165 or Rec Tec on ES setting which I believe is suppose to be 180ish. Thoughts/Preferences?
 
I always like a some smoke. I do not have a dehydrator anymore but maybe 2 hrs on the smoker then into the house for easy drying? May be worth a shot.
 
100% RT. 4-5 hours depending on thickness and you got some real deal jerky.
I have an RT-700 low setting is 180. I imagine ES is that or lower.
I would run the whole batch at ES until finished.
Dehydrator is fine too but then I would add liquid smoke. Some folks don't take kindly to it but it is after all made from smoke.
