Hey ya'll, Im almost done with my cooker, I still need to build storage racks ( angle and expanded metal) for the trailer, seal the doors, paint and mount the toolbox. I've done two small cooks, 4 whole chickens on the first and 2 boston butts everything went well, except for the long nights learning the cooker and making sure temps didn't get out of control even though I did a 40lb(charcoal) test burn while seasoning. It took about 45 mins to an hour to get to 250°, and ran it up to 350° and choked it back just to see it happen.... Got it back to 250° and temps were consistant from one end to the other.... Dead even, gauges are 2" above grate and 10" from each end of the door. I am kinda kicking around the idea of insulating the firebox. Thoughts?? My phone is giving me a hard time downloading pics in the thread.... I did however get a few in my avatar album...
