I injected and rubbed the brisket on the 2nd about 11:00pm with most of what is in the picture below.

I put it in the pellet smoker at 11:30pm on the 3rd at 225* with Hickory pellets. at 8:00am this morning I added spicy baked beans and my first and not last peach and blackberry cobbler.

I pulled the cobbler around 11:30am, the beans and brisket at 1:30pm.

The brisket looked perfect but I wrapped it in foil since my wife works nights and was still sleeping.

The spicy beans came out better than the last time I made them.

The cobbler was so good. It was under done in the middle but was cooked well around the edges. I will keep it in a little longer next time.

The point of the brisket kind of fell apart like pulled pork. I think I left it wrapped too long. It still tasted great though. I just added some sweet baby rays sauce to that half and it was fine.

The other side sliced well.

It made a nice plate. I packed most of the pulled pork(brisket) and half the beans up for my wife to take to work.
