I could stand a little of that weather. I am about tired of below freezing weather.
I would have to get the Ice and Snow off my boat before any cleaning.
Looks like you are eating well. I will try Fish on my smoker one of these days.

So far I have never had that problem either.
I normally make up about a 2 - 4 cup batch at a time, and put it in the large size Parmesan Cheese plastic dispenser for use. I do not refridgerate it, I just keep it in the cabinet.

Well Said.
I think a lot of folks think they need a Ferarri, before they get the bugs out of driving a Pinto.
Do your research on smokers, BUT spend your first money on a Maverick 732 or 733 and a Very Good hand held digital probe.
Good temperature reading gear should be on the list well...
You did well. I picked up a couple today myself, just not that cheap. Mine were $1.31 a pound. Also picked a up large package of Pork Steaks @ $1.60 a pound. Not bad for in the sticks pricing.
Now if Beef would get a little cheaper. You almost need to float a loan to buy a Brisket. Did I...

The Flange he used on the bottom of the Air Intake is called a (3/4 Inch Floor Flange). They are used a lot when building Hand Rails from Black Iron pipe. Useing the Floor Flange instead of Conduit Loc Rings on a Nipple should keep things tight. The Floor Flange is held on with 4...
Very Nice Build, and looks very well thought out.
I really like your Rolling Cart with Dual Shelves. Using one shelf as the cart handles was a great idea.

I am a Project Kinda Guy. Build another one, better than the last.
I did not use all of the Big Pappa Kit myself. I ordered individual parts.
Part of the build depends on the lid you have.
Flat Lid, No Bung Holes use the Big Pappa Exhaust, Lid Handle, and Lid Holder.
With 2" Bung I would go...
I think building your own ash pan would be better.
Pizza Pan held on the bottom of the cage with 4 each 1/4 X 4 Bolts.
Use Tubing 3" long as Stand Offs between the basket and Pizza Pan.
Use Fender Washers on both sides of the basket bottom, then a Loc Washer and a Nut.
Now it is solid, and...
My theory is you need Equal to a little larget Exhaust than Intake.
Most have either 3 or 4 each 3/4" Intake Ports.
The 2 Inch Bung should be plenty. It is 3.14 Sq Inches.
A Weber Dome lid with ONLY 4 each 3/4" Holes is used every day with no issues, and the 4 each 3/4" holes equal only 1.77...
I think from my reading, someone has to approve the picture manually when you are new to the site before they open up.
It must not have been approved yet.

I bought the Big Pappa Shield, Bottle Opener, Side Handles, and Basket Lifter. I should have gotten the Cooking Grate for my Diffuser to set on for $16.
I had the basket built using a new Charcoal Grate for a Weber 22.5. I had the sides made from Large Hole Expanded Metal 12 inches tall. I got...
Very nice build.
I have seen toggle latchs used to hold the lids down. You might look into doing that to keep the lid tight.
Looks to me like you did your research before building.

The 3/8" Brass Lamp Stems are popular. You will need 2 Brass Nuts, one for each side. After you get it installed, cut the excess length off.
You can also use Silicone Grommets available from Maverick.
No picture in my collection, but a Brass Air Hose Barb will also work. Make sure the...
Exhaust:
The Weber lid has 4 each 3/4" Holes. That is Only 1.77 Sq Inches of Exhaust. The Weber lid works OK.
The 2" Bung is 3.14 Sq Inches, which also works just fine.
The Big Pappa UDS Kit has a Rotary style Exhaust with 8 each 3/4" holes 3.54 Sq Inches. It also works just fine.
I have...
The Gateway UDS looks to have a pair of 1.5 or 2 Inch pieces of Exhaust Pipe welded to the side, extending up with a Side Sliding Intake Valve made about like the Exhaust Stack Top on most Offsets.
You would probably need a muffler shop to put a 90 on the end of the pipe, Then Chop Saw it close...
My thoughts would be to:
1. Install a Better Thermostat in the existing hole.
2. Buy a Maverick 732 Thermometer with dual leads.
3. Make a hole in the end away from the Fire Box for the Maverick 732 Probe Wires.
4. Add Tuner Plates to the cooking chamber.
5. Build a charcoal basket
6. Have...
You should be able to use an angle grinder around the outside edge of the top. Cut till the seam appears all the way around, then drive a screw driver between the layers to seperate the top.
On my build I bought a drum that had been Can Openered. I had a piece of 1/8 X 1" flat steel welded...
It looks good. I have never seen one exactly like it. With 3 elevated Ball Valves, you must not like bending over at all.
Looked like 5 Grill height locations. The 90's on the Exhaust Stacks look good.
