Looking For Info On My New 75 Year Old Slicer

Well I took it all apart cleaned everything and got it all back together. I still want to paint it, but that will have to wait for milder weather. I'm happy to report that it works very, very well. I have had to wait until today to actually slice up a roast for jerky, but the day I got it back...

Looking For Info On My New 75 Year Old Slicer

Wow! Thanks Maple Sticks. The one on eBay looks to be in about the same shape as mine. It comes complete with the original meat tray which is, as far as I know, the only piece that I don't have. I was happy to see the photo that showed the actual US patent numbers, mine only shows the dates...

Looking For Info On My New 75 Year Old Slicer

Thanks NEDtorious. I've been communicating with some of the nice folks at Old Slicer Parts and Berkel Midwest. So far I've found that for the most part, parts aren't available, as you I'm sure already know. There's a gentleman at Berkel Midwest who's off over the Holidays who has a lot of...

Looking For Info On My New 75 Year Old Slicer

It's a push-pull thing. Push the lever ahead and the blade rotates as the carriage moves ahead and pull the lever back and the carriage returns and the blade coasts. The meat cradle is spring loaded as well so that the meat is held against the blade by spring tension as it is sliced.

Looking For Info On My New 75 Year Old Slicer

Hi folks, I recently purchased a Berkel non-electric, lever operated meat slicer and I'm in the process of cleaning it up and restoring it to as close to new as I'm able. It's been sitting in a shed for the last 15 or 20 years so it needs a real good cleaning most of all. It appears to be all...

    Mellowing Time

Thanks Tom, In my particular case that really makes a lot of sense. I have a very (at best) makeshift and small setup, because I just wanted to try some cold smoking to see if I could do it, so my smoke generator is quite close to the product I'm smoking. That being said, it's working pretty...

    Home made smoke tube

I found out after I bought them that they weren't 100%. Didn't much matter anyway, because they were the only Apple pellets I could find when I went looking. My neighbour has an apple tree in his yard that died last season. I think I'll offer to take it away for him so I can try the real deal...

TENN COUNTRY SMOKED BREAKFAST SAUSAGE 1st THREAD with Q-VIEWS

Do you think that this recipe would work with (gasp!) ground turkey instead of pork? I made some patties using a pork recipe and used turkey instead and they turned out pretty good.

    Mellowing Time

Hi Folks, It's my understanding that smoked cheese needs to rest after it's smoked, optimum 4 weeks or so. I smoked some cheddar, feta and Baby Bels a few days ago and the suspense is killing me. Do the softer cheese like the feta and Baby Bels require less mellowing time than the hard cheeses...
