I've heard so many different opinions on this. Last one I got was to cook breast Down but take a fork to the inside of the bird (breast side)so the juice for dark meat fall and gets absorbed into the white meat. Any tips on placement?
Just bought my smoker today. I love to grill and I'm anxious to get started I've never attempted to smoke until today.. 1st dish didn't go too well. Too hot for too long is what I learned. (Thanks jarjarchef!) but I enjoy cooking and challenging myself to prepare new dishes.

Thank for the tips! I used lemon juice, b. Sugar salt and pepper. I used less then Half of the salt it asked for In The recipe. I will defiantly try the tips you guys suggested and anything else you throw my way
