I had the enlarge the holes on the plates a bit after my first cook. After that it seems to be holding temps pretty even across the cooking chamber. I will probably have to get some thicker stock and go with the tuning plate method but until then these sheets were cheap and available.
I just purchased a highlander from Wally World did all the mods I could.
1. Put a baffle between the firebox and cook chamber
2. Made a charcoal basket.
3. Made three plates with various size holes in them to spread out the heat
4. Dropped the chimney down to the cooking grate.
So after all that...
