My Wood Magazine came yesterday. The plans look pretty good. It uses standard oven racks, cement board interior, pink foam insulation with a warning not to exceed 250 degrees. My suggestion might be to use a mailbox mod with electric heat & a PID controller. A standard oven element might be...
True Dat! I have a 4" chimney on mine with a damper that I can adjust. I opened up the original hole & left the inside hole slightly smaller so it doesn't have to be fastened. It just goes through the top layer & sits on the bottom one. I've successfully smoked turkeys, cheese, pastrami...
I converted mine 3 years ago & love it! I started out with a Bradley smoke generator, then did the mailbox mod to decrease the cost of operation. I added an Auber Instrument PID controller & switches to run the lower element on 120 or 240 volts & the upper on or off. It holds + or - 1 degree...
You might consider welding the 2 rounded ends together after you cut off the end. If you watch Aaron Franklins youtube video of making a propane tank smoker, you'll see a simple way to mark & cut the hole. It would be less welding to do it that way. Then you have a flat end for the firebox...
There shouldn't be any problem with galvanic action between steel & SS. Here is a link to my build with a SS tank & steel FB http://www.smokingmeatforums.com/t/242384/stainless-cook-chamber-build-reverse-flow
Yours is about the same size as mine. Not sure what you mean by making the water...
It may never be completely done, but it's getting close. The ribs turned out good enough to take to work to share samples. I've done some pork shoulders & brisket as well. I'm learning how to cook on it. Still need to put in an upper rack. The balance point was right where the big wheels...
I added an additional air vent in the door and got structure & casters under the cook chamber end.
It's functional, now, but I'll probably be fine tuning it for a while.
I work for a Fortune 500 company. If there are materials that are deemed to be scrap, and if we want those materials, we can ask our supervisor for a piece of paper giving permission for us to take those things out of the plant. Actually, my father worked for the same company & he brought home...
I did a similar build 2 years ago. It's posted here. http://www.smokingmeatforums.com/t/166296/smoker-from-electric-stove. I started out with a Bradley smoke generator which works great, but is a little pricey over a long cook. The mailbox mod with AMNPS works fine for a lot less money. I...
I've been hitting it hard this week & cooked on it! It's not finished, but it is functional. Cooked a pizza & roasted veggies that turned out well. The temps got away from me in the wee hours of the morning & burnt the outside of the pork butt & brisket. I was able to cut off the black parts...
