I've got 14 lbs of Tillamook cheddar getting a smoke this weekend, just received my delivery of Pecan and Cherry pellets from A-MAZE-N. I may also try turning a beef chuck roast, depends on whether I drive to Costco (an hour away). Happy Father's Day all.
Socwrkr, Where do you live? I live at a high elevation (6000ft) and come to find out, the amnps doesn't stay lit over 5000 no matter what you try. Todd sent me the amazn tube smoker and it works great!
as for the amnps, if it is still smoking, just not much, you could try lighting at both...
This is my first "successful" smoke in my adventures. I put the quotes in because I tried a pork tenderloin a couple weeks ago....
Regarding the chicken, I just mixed in some Kirkland signature No Salt seasoning in with about 4 oz of extra sour cream from another recipe, rubbed that under the...
Finally back from vacation and received my amazn tube smoker, and it has stayed lit! both in the open air and inside the MES40, the tube stayed lit the whole time. I can't figure out why the tube is so much better at high elevations, but thanks to Todd I have good smoke generation.
Thanks...

Is that a cast iron stove damper on top? And do you usually keep it wide open or mostly closed? I've got the elbow now and the dryer vent for a mailbox mod, but trying to figure out how to do the damper.
thanks Bear and Geerock for the speedy replies! I had thought that the open air test was telling me that I'm not lighting properly or using the wrong pellets. It didn't occur to me that the pellets could be damp since I live in such a dry climate, but you never know I guess. After reading...
I recently acquired an AMNPS and I'm having trouble getting it to stay lit. So far I've tried the blowtorch and hair dryer trick to really get a nice bright red coal going, then I set it on my regular grill (the grill was not on) just to try and see if I am getting it lit properly. It burned...
Greetings from Cedar City, UT
I'm a psychologist here, working in the counseling center on campus at Southern Utah University. I live just a couple hours north of Las Vegas and just a short drive from a bunch of national parks. I am a computer nerd, shadetree mechanic, and a mental health...
