    Oh I also line the bottom of my main chamber with a long strip of heavy duty aluminum foil (the wide roll) to catch drippings when smoking or ashes when direct grilling.     Read my post again about seasoning the smoker with Olive or similar oil. Then a nice smoke with some Hickory. The oil like on a cast iron skillet will eventually build up a nice aromatic coating. As far as the grates. You said bottom grates. I don't mess with the bottom grates. Charcoal goes on...
