    90% done! Not sure if they ever get 100% done though.... 2nd seasoning smoke through it at 315 deg for 2 1/2 hrs! Few finishing touches and a pesky tire that I'm just gonna buy a new tube for, tired of patching this one...

    Updates from today's work, had to take the morning off to go fishing... And put the days catch in the Big Chief for dinner! Got anxious so we did a test smoke with small charcoal fire, got the smoker up to 160 pretty quick and held it for a couple hours, love the smell of the first seasoning...

    We used some old barn wood on the frame below where the smoke enters and put a bottom in the smoker below that which will be lined with metal flashing to hold any embers. Also the lower area will have a door on the front so it can be used for storage when not smoking. The exterior is 3/4 oak...

    My Programable PID All Electric UDS

    Have you tried to use pop's brine recipe and soak a brisket for a day or so before smoking? I'm very interested in how that would turn out in the Electric UDS.

    Question on sealing wood on smokehouse

    If you use anything flammable to seal it, just make sure you let it dry well and leave the doors open a day or two to make sure the fumes have a chance to escape, even though its on the outside, it will take some air to make it safe to light a fire.
