    Whole Cow

Well bad news on this project. The cow we had planned to be cooking ended up dying it the pasture on Friday, only a few weeks before the planned slaughter date. Now the question is, what to cook for the BBQ we already have planned? We were thinking possibly whole hog, or to keep it...

    Meat injector Gun or Syringe?

I use this Stainless Steel injector from Bayou Classic. It comes with 2 needles, but I only use the one with the large opening at the end (less likley to got spices clogged in the holes). The best tip that I have for all syringe type injectors, is to remove the plunger and rub some type of...

Don't Know if this counts as UDS, but it's made of drums

Thanks, it's not quite as pretty now after many, many hours of smoking meat has dulled the shiny paint. Also, I have added some temporary air intake to the firebox and temporary exhaust to the cooking chamber for this summer. Hopefully cooking with these adjustable and temporary modifications...

    Whole Cow

I do know some people who did a whole cow (full size, 600ish lbs.) on a homemade propane fired rotisserie about 30 years ago. It has been decided that he will not be worth anything to sell, so of course the only other option is to have a big...

Don't Know if this counts as UDS, but it's made of drums

The bottom drum contains a removable firebox to make adding wood/ charcoal easy. Counterweight on the lid makes for easy opening/ closing, and holds the lid open while adding or removing meat. Water bath pan under the cooking grate to add moisture to cooking environment. I am still...

    I'm Here

I started grilling on gas grills when I was probably only 12 (we called it bbq back then because we didn't know any better). When I was in my early 20's I was introduced to Traeger Wood Pellet Grills. After reading almost every recipe in the Traeger Cookbook that came with the grill, and many...
