Of all the gas cookers I have built the best was learning to make a good venturi. That is where the fresh air mix is critical and get the distance to the first hole right so the air has time to mix with the gas before it burns. I promise you that's your problem. Talk to Tejas Smokers in Texas...
Hard to say how that's gonna work out . I did mine above my firebox and just put a little slide vent for more heat and I get a little smoke. You may be able to put 2 or 3 small vents from your cook chamber but you will get smoke. I hope you work it out.
yes you can click on the photo of the fire box and enlarge it to see. I turned the angle so one leg butted up to the wall of the firebox and it looks like a channel shape its really strong. I framed the inside of the door with tube and it fits in that angle when its closed for a positive seal...
