Just started first ever smoke
Tried the 2-2-1 method for the baby back ribs but they were falling apart tender after the second hour so not photo. They were overcooked but edible. Here is what remains on the pit:- pioneer

Here is a better photo of the Brazos. The lids did not seal perfectly so I used an adjustable wrench and worked my way around slowly bending the strip of metal and now have good closure on both doors. Quality control could have been a little better but overall I think this a lot of pit for the...- pioneer

Went to Academy yesterday and got me an Old Country Brazos pit. Got it cleaned and seasoned yesterday afternoon and played around with fire and temps also.
