I am wondering about sausage casings because I have been experiencing some "toughness" with natural casings after smoking the homemade sausages. Are there any generally accepted rules or practices to reduce toughness in the casings ?
I normally store my (natural) casings in the freezer...
I also have recently acquired an Okie Joe & tried it out last night. My Okie Joe has both a horizontal smoker and vertical smoker & is very cool. We did chicken, ribs, beef & brats last night. it was a lot of fun & I'm looking forward to more smoking. I am also a home brewer & my goal is to...
Howdy All,
Just wanted to share this picture of a new "used" smoker I was able to acquire for free this week ! It is an old style Oklahoma Joe with both a horizontal offset smoker and vertical smoker all in the same unit. This is my first smoker & I'm really looking forward to my maiden...

Very Nice !

Thanks in advance...marco

Hello, I just joined this community a few days ago. I've been brewing for a little over 5 years. Started with a basic extract kit, moved on to partial mashes & have been doing all grain for the last 4 years. Just became a certified beer judge this year thru the BJCP (Beer Judge Certification...
Howdy Everyone !
My name is Marco, and I live/work in northern Colorado. I've been cooking and working as a professional chef for nearly 20 years, however my bbq experience has been limited to smoking about a half dozen whole hogs, backyard grilling and then oven braising meats rather than...
