If you look at my post on #26 I have pictures of baffle I used. I built something like an air duct to it . That is what keep the heat flowing and prevents the hot spot. Then another layer of steel for grease catching.
Ok its almost been 2 years since I've started this post. So I thought I'd give it a update. I finished it on April 2013 and have cooked on it maybe 10 times already. And it cooks just like I thought it would. The test run showed no hot spots at using the bread method. I think the fan prevents it...
