Great progress, and great to see your hitting your goal temps now. I've got the bottom of mine insulated and I've just got a single 1.5" pipe in the bottom as an air vent ... at first I was concerned it would not be enough but the AMNPS seems to be working fine for me.
I think there is enough air space between the AMNPS and the element that it won't effect it much. Right now, I have a pie pan full of pea gravel to provide some thermal mass between the two ... I'm also thinking of replacing the pie pan with a piece of ceramic tile.
Ya ... I thought the same thing, but I had already used all the left over siding I had on my smoker build (left over from my shed build - that's sort of what prompted the smoke house build). My next big project is a stone patio with built in fire pit ... Hope to start and finish that project...
Yep, totally understand ... I enjoy planning and building projects myself versus buying them. My wife's work requires her to be out of town twice a year 10-12 weeks at a time, so that's when I get to work on MY projects - makes the time go by faster too ;)
Yep, you'll definitely want the SYL-2352P ... I think you might be surprised at how much heat the element can put out - I'm sure I could get over 300F if I wanted in my smoker. If it doesn't put out enough in the winter for sausage and jerky, I'd think you might just get away with building a...
I ended up switching to the SYL-2352P - which allows programmable steps ... At some point I'm planning on programming common "profiles" and I would then just jump to the appropriate starting step for that profile - I could imagine these profiles could be cold smoking vs hot smoking, chicken vs...
I don't know, it's a 3-prong plug so you'd just want to use a gauge that can comfortably handle 1500 watts. I don't thing it's a high temp cord because its made so the cord would exit at the bottom of the smoker.
I ended up only putting a single 16x16" tile under the element kit. I had to cut a square on one end of the tile for the element cord and one square on the other side for the air vent. This element kit comes with a round sheet metal plate with a support platform that the element sits on, so...
I'm pretty sure I could get the smoker over 300 if I wanted ;)
I use the digital temp gauge to display the internal meat temperature with a second temperature sensor. The red round thing is a lighted alarm that I have wired to the PID ... not sure I'd need it, but its there if I do. I don't...
