I've had a couple more smokes since last updated, smoked a chicken and a pork shoulder the other night. Went pretty well, temps didn't budge once I dialed it in. Got a couple Q-Views but haven't had a chance to load...
What I did because I did have a fair bit of wind blowing in the exhaust (smoke kept coming out of the intakes) was I took my charcoal chimney and set it on the exhaust upside down. I'll do something a bit more elegant later on. Still a couple odds & ends to take care of, put a hanger on the lid...
Still need to paint it but it was WAY too windy today. Anyways, had a pretty good smoke today, couldn't get the temps to hold how I want just yet but all it'll take is a bit more practice. New smoker and a lot of wind makes for a learning curve.
My family all likes their ribs a bit different so...
I smoked a few boneless chicken breasts last night while seasoning it. Figured why let the smoke go to waste? They were good but nothing special. Literally thawed them, put a little salt and pepper on and tossed them on the smoker. This weekend I'll be doing some spare ribs, never done a brisket...
I plan on it. Its adjustable so if its off I can fix it. Didn't do it first because..well...I wanted to test out the smoker and I'm impatient. I'll pull it off tomorrow and test it. I saw where some people drilled out a bolt to hold the thermo steady.

Got everything assembled. For the record, 1-1/8" holesaw is just a bit too small for a 1" black pipe nipple. Took the dremel with a grind wheel to get a little more room, had to take MAYBE 1/16 off the diameter to get it to fit.
Picked up a 12" deep fry thermometer, drilled the hole and stuck...

So I found a little time to work on this today. The first burn didn't really do much so I decided to give it another try. Loaded the barrel full of scraps and let it go for a while. Once it died down to the bottom and a small manageable fire I had a stroke of genius.

It's all untreated and unstained/painted. Good, that will save me from having to tear pallets apart or cut them up, I'll just dump a bunch of scraps in and let it burn.
