This Girl is suffering from a serious BACON DEFICIENCY!!!! Proof eating meat makes you smarter...

Youtube is great, but the comment section is off limits, for me.  I only read them for a laugh.  The person in question here seems to be  full of self-loathing, that's the only explanation for such uncontrollable anger over other people's eating choices.  Great video though, I'm hungry.

    Hunsaker Vortex Drum Smoker

I'm not familiar with your particular smoker, but if you compare the dimensions, and it fits then it should work.  On their website, they sell a basket that fits the 22.5 weber smoky mountain.  Not sure if that helps, but check their site and see.

    Using hot coals

Yeah Zach, I've done that with my charcoal smoker.  Its really no different than using hardwood lump charcoal.  Poplar will work, any hardwood is fine.  Just don't use "softwood", which are woods from evergreen, cone bearing trees.  Basically, if it has leaves its a hardwood.  Hope that helps ya.

Water pan - do you use it?

You're right it does come down to personal preference, and some experimentation is necessary to decide which you prefer.  A heat sink is something that absorbs heat, then with charcoal, the heat sink release its heat as the fire dies.  That way it reduces temp fluctuation, with a gas smoker, the...

    3 a.m. smoker thoughts.

One time, after being away from home for a couple of weeks, I lit my gas grill.  I lifted the lid to check if both burners had lit, and two very fat rats came flying out from under the lid.  They hit the deck and disappeared off the side, scared the cr@p out of me and my dog.  After that I did...

    Smoking wood in Northern Europe

I'm not sure if this will help, but birch is used for smoking.  I doubt it's anything like pecan, but would be similar to alder.  You may have already tried it, but I figured it was worth a mention.
