I smoked an 8 pound turkey breast today. Took about 8 hours of tending the smoker. I also did some country styled ribs.
So I was opening the smoker door more than a few times. To make matters worse, my Maverick probe for my meat malfunctioned. I think I got the damn thing wet when I was...
If your wood chip pan was anything like the one I got with my masterbuilt that's your problem.

Use the tin foil trick, or ditch the oem pan for a cast iron frying pan.
I smoked...

I had a relatively small and thin piece of meat. I made a lot of...
Looks delicious:
Smoke ring....
Had good taste...but was tougher than I'd imagined it would be.
I'm aware that since the cut of meat I bought was trimmed of most of the fat that perhaps it was the meat.
There was no way this meat was being "pulled".
Suggestions for what I can do...
4.5 hours at roughly 200 F (interior temp of smoker - not meat) then wrapped in tinfoil for an hour at 250 F
Now sitting in cooler wrapped in blankets for an hour.
Can't wait to unwrap and check this bad-boy out. Pics to follow....
Just about everything I've ever had from Brooklyn Brewery has been fabulous. This one is right at the top. Definitely worth a try if you haven't had it.
