A trick I have used with Smoking Cheese and butter is to place a pan full of ice under the soft cheese to keep the temp of the cheese or butter cooler. I love the taste of smoked cream cheese makes great cheeseballs

We had a Chorizo with jalapeno and ghost peppers with monterey jack cheese wrapped in a bacon weave

Had to dig out my Smoker
Took me 3 hours to bring up to a steady temp. Our temp was 6 with wind chill was @ 0
Thanks for the thoughts. I only have $20 in the stove it is just yard art for now. I keep looking at the stove I do not think it will take much to turn it in to a smooker/grill . Just think it will be a nice cooker and have some use with it taking up space on my deck. We do alot of entertaining...
