    First attempt at andouille sausage.

BTW nice thread.  Like the way you laid out from start to finish.  I need to work on this!

First smoke on the MES 40. Andouille Sausage!

Nice! I had to deal with wind and rain for a brisket yesterday.  Ran the smoke way over the time it usually takes.  The family had to settle for hotdogs!  Eating today. Funny how weather can throw off the MES box so much.  I have the 40" Gen 1 too. Great pics!

    Brisket Philosophy

I have some starting pics, but there was some heavy rain in NE Tennessee last night and didn't want to get the camera wet.  Excuses, excuses.....will make up next time!

    Brisket Philosophy

Hi to all the great people here at SMF! Finished a brisket last night about 2am.  Rain and weather added way too much time to may smoke. That is not the point of the post, however.  I had time to think about life and how it relates to smoking a good brisket.  I posted on my facebook and thought...

First smoke on my MES 30- 2012 Model

Hi Tyler. You will find lots of info on MasterBuilt smokers on here.  I own the 1st gen 40" and love it.  I had the Gen 2 40"  (same year as your 30")  but returned it and kept the Gen1.  Nothing wrong, just preferred my Gen 1 better (guess I'm just used to it.  Although some have reported...

    Cold-Smoked Venison Breakfast Sausage w/ Q-view

For some reason I have never thought of making my own sausage with my venison.  This looks great.  I've bookmarked this thread and will be trying soon. What kind of vacuum sealer do you use? +1 on the AMNPS.  A must for cold smoking!

First brisket a success - but a little dry.

Pics look great.  Looks like you got a smoke ring! I do the opposite of what you described.  No secret, it is the same as the beef sticky http://www.smokingmeatforums.com/forum/newestpost/50979 I cook at 225-240 until brisket IT is 170.  Then I foil and put back on until 195 IT.  Then leave in...

Welcome.  Good luck with the Wood build.  I'm sure there are plenty of people here that can help out with that.  Keep us updating on how it goes!

    New to the forum

Welcome!  I did the exact opposite.  Went from a gas to an electric.  I like to set the smoker and somewhat forget!  Both are great! Happy smoking!

    Basic Brisket Smoke

Like this sticky...what I've done for years!  170 foiled until 190-195 then wrap in towels and in the cooler for an hour.  Great every time!

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

Noticed that the Gen2 I had ran very hot using my Maverick 732.  Mine was reading almost 50 degrees lower on my unit readout with temps way over 300!  Per my last post in this thread, I did return it and kept my Gen1.  I still think they are both great, just hope MB works out the problems...

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

Okay...here is my take on Gen1 vs Gen2 after using both side by side. They are both great smokers, but I'm going to keep the Gen 1 and take back the Gen 2.  This is based on my preference, do not want to start a fight here! I will write a full review with pics tomorrow (family time ATM). But...

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

How is your review coming. I trying to make a decision on which one to keep.  The gen1 works for me, but do not want to make a decision before using the gen2.

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

Thanks for the input, that is good to hear! Anything specific that you like?  How do you like the built in drip "collector"  Also, do you use an AMNPS?  And if so, does it work just as well in the gen 2?

    2012 Masterbuilt Smokers - NEW 30" & 40" Models!

I have a MES40 old gen 2011 that I bought at Sam's.  Was a little upset when I found out they just put the new gens in my Sam's store.  Anyway, I ordered the new gen from Sam's and the store manager said I could bring the old one in (bought 12/24/12). Anyone had experience with both?  Should I...
