Lamb Spit Braai in South Africa

Ahron Awesome set up there.  I am in the process of getting a large charcoal bbq fabricated for me and want to have the option to put a large mechanical rotisserie above it like yours.  Can you give me some pointers as to what your thought process was when making yours and maybe point me in the...

    Smokin #3

Has anyone done a beer can chicken in a #3?  Or any chicken for that matter.  I would like to try but I have read on other discussions that chicken should be cooked at a higher temp than the 250 max for our units so that it doesn't get rubbery skin.   Is this smoking myth or reality?  In my...

    Ribeyes from the Smoker

I believe it is in order to try and get a "smoke ring" which needs some form of combustion etc....If you scan the electric smoker forums there are plenty of posts about it that can explain it a lot better than I can.

Volume of wood chips to use?

What about for long smokes, the instructions say not to reopen the wood box but I gotta think that for a 10-12 hour burn you could unplug the unit and then add a couple more chips/chunks after 5-6 hours.  Has anyone done this?  Is there enough "smoke" from the initial chunks (the instructions...

    SMOKIN-IT SMOKER

Just wanted to say that the customer service ordering my #3 was great as Steve made sure my smoker was in the Fedex system last week in time to be delivered for the weekend.  Ordered on a Wednesday, delivery on a Friday-pretty darn impressive.  Seasoned it Saturday, used it Sunday and all was good.

    Boneless Short Ribs

So just to report back, I ended up making these last Sunday to limited success as I was not a huge fan but my two sons loved it.   I put em in dry at 250 till they hit 170 about 2.5-3hrs, then I foiled them up with lots of liquids to 185 and then took em out and let em smoke again till 195-8.  I...

    Boneless Short Ribs

Yesterday at my butcher I picked up some boneless short ribs seeing that they looked pretty good. I figured I'll buy them and come here and figure out how to cook them. Well after a decent amount of searching I am still a bit unsure on proper technique. Right now I am leaning towards the...

    SMOKIN-IT SMOKER

I currently am borrowing a friend's Traeger but I am going to pull the Trigger on a #3 in the near future and was wondering if I can use pellets in the Smokin_it?  By reading above it sounds like I would use it in the AMNPS or can I the pellets directly in the smoke box? Thank you!

    Smokin-It # 3 Arrived!

Thanks for the pictures, looks like a great rig.  A few questions for you: I am looking at buying a #3 and I was wondering how transportable it is?  I have a weekend place that I would like to be able to bring it to in the back of my pick up.  At 135lbs, it's heavy but doable.  Is the unit...

Newbie first time smoker with a borrowed Treager

hi y'all, notice everyone is awfully helpful so wanted to get some advice. Have people over Sunday and I borrowed a buddy's Treager electric pellet smoker. I live in new York so the temperature outside is about 55. I want to have a couple food options for some people coming over Sunday so I'm...
