It's a pretty simple equation for me when it comes to wet vs dry wood. I have a big 250 gallon offset that I built which allows me to burn a really hot fire.

Wet wood will always produce a lot more smoke. I don't like...
Not sure how he did his, but I filled both of mine completely with water and removed everything at the top so water would be leaking out everywhere it could. Then started cutting slowly. Did the first with a grinder, and started the second with a torch. I wouldn't recommend the torch as the...
I opened up the throat a bit tonight with the torch. We will see next cook. Do you prop your wood up on anything to maximize airflow, or just sit it all in the coals?
Looks amazing man! Awesome job. Have you taken it to the Cat Scales? I'm curious what that behemoth weighs.
I ended up using almost all of 2 250 gallon tanks. One for my firebox (insulated) and one for the cook chamber. I was getting nervous about the trailer axle (it was super old) so I...
Believe it or not, I did most of the math myself. Ex math nerd here. After using his calculator, I think I should open it up a bit. I intentionally went small so that I could go bigger later. I was more concerned with the draft. I'm going to open it up a little tonight and probably weld a...
Dropped it off for sandblasting Saturday, will weld it in this week, and then pretty close to getting the thing mounted to the trailer and then back to be sandblasted prior to paint. Getting close
Yeah his book is great. I'm not cooking every day, but often. I had the leftover tank so why not use it, ya know? I cut a section out of it and welded it back to slide inside the other. Gotta get this paint off first.
I'm confused, is that a single axle trailer? What is the weight rating of the axle(s). I'm way over on the trailer I bought, so I'm buying a much stronger single axle - I don't want to have to outfit a second axle...
I had about 2/3 of a leftover 250 gallon tank from the firebox. I've decided to cut the end off it, cut about a four inch section out of it, and then bend it to close the gap. I'll throw that piece in the firebox and weld it in place. I like the cost of this option the best - $0.00
I think my main point is to minimize heat loss. I've got another 250 that I'm going to cut and "bend" to fit it inside the other so it's double thick. Weight is the new problem...
