Berkel 919 12" automatic commercial deli slicer. Adjustable thickness. Heavy duty. Works great. Was stored in garage for 2 years. Needs some cleaning and TLC. Needs auto drive belt. Slices manually fine. Has sharpening mechanism and stones. All guards in place.
That's how I see it and what many of the fine folks here say. Unless you get some mold or unknown growth on the racks, then clean and re-season. What I do everytime I fire her up is, Get the pit up to 350 degrees, spray the inside lightly with water from the hose to create alot of steam, then...

I was most happy with the way the pork loin turned out, very tender and juicy. Pulled it at 150 and foiled, let rest till everything was done and sliced just before pulling the butt. Very tasty!!
Things turned out great! The officers ate everything and there was a lot of food. I think there was a total of 7 people and everybody went back for seconds or thirds. The brisket turned out great and I will definitely be doing a larger one next time.
Got a late start, had no charcoal and no cherry. Guess the wife used all the charcoal and forgot to tell me. After the home depot trip I'm fired up and should be up to temp in about 30min. Going to load it up at 230 degrees, monitor IT and cook like they were seperate items. Pull, foil, replace...
