    There's a number of ways to do the ribs but most importantly, get your heat source consistent.  If I'm doing St Louis style ribs, I'll keep the ribs at about 190 -215 degrees for about 3 1/2 to 4 hours.  Start testing at the 3+ hour mark to see if the rib bone will begin to twist.  Some people...
