    I know there can be a temperature variance on the MES, but this much?

    I have the digital MES 30".  I'm trying my first smoke right now with a whole chicken and some sausages  and it is a little closer.  I'm having to watch the temp though as it is hot outside and the smoker is getting direct sunlight.

    I just got a MES 30 and went through the seasoning steps per the instruction manual.  I also setup my Maverick thermometer in the middle of the second rack from the top to get a feel for the temperature variance.  I checked it after about an hour, hour and a half and the MES was in the 271-275...

    Just ordered my smoker from Amazon.  MES 30 digital w/ window and a cover.  from what I have read on various sites the review are pretty good so i'm excited.  it will be here on Wednesday and can't wait to get started.

    I moved to NC just a couple years after high school so cooking wasn't high on my priority list.  At that time in my life my thought process was more like why cook it myself when there are all these great bbq joints around? I know how to BBQ on paper so to speak... just have never applied it. ...
