Smoke stops after 20 mins. Can't hold 250 degrees

One of my smokers is the Master Forge dual door propane smoker.  I have used it for about 2 years now.  Like already stated fist sized chunks of wood work way better then chips.  Don't worry about the lid of the wood tray sitting correctly.  I load it with about 3 chunks and put the lid on top. ...

    Missing smoke flavor

Thank you for your thoughts.  I am confident in my cooking temperature.  I use a digital probe and two oven thermometers.  I have been using wood chips from local grocery market.  I never thought to check for fillers or how old they are.  I will look into that and try a different brand/kind. ...

    Missing smoke flavor

Hello everyone.  Thanks in advance for any help and guidance.  I am having trouble getting smoke flavor into my meat.  The flavor and tenderness is great but only a very mild smoke flavor on the outer portion of pork shoulder or brisket.  I have a master forge vertical propane and an offset that...

    Opinions wanted

    MY 1st Packer

I have also found that when I have done a brisket it takes much longer then 1 1/2hr per pound.  I read somewhere this might happen if the brisket was frozen at some point.  I always bought it from a grocery store (wegmans) so I am sure it was frozen at some point.  I plan on getting a fresh one...

Newbie. HELP ME PICK MY SMOKER!

I have a verticle propane master forge.  My biggest complaint is the size.  I wish it was wider so I could fit full racks of ribs without trimming them down.  I would go with the wider body.  With the propane smoker you don't need to stoke the fire and rarely should need to add wood so opening...

Newbie With A Master Forge Propane Smoker

I have had this smoker for over a year now.  My first few attempts with it I couldn't get the temps above 170.  After messing around and using an infared thermometer I found that the water pan was too large and not allowing any ariflow to rise.  My burner chamber was over 350 degrees.  I remvoed...
