    Thanks for all the tips guys, I was able to get my smoker up to 300 (I have an ECB) but wasn't able to keep it there long. I tried the minion method for the first time and I must have put too much on the outside. The birds are in, and I am watching the smoker temp carefully. Is 250 an ok temp to do?

    Replacement Grate

    Hey guys, I have an ECB and I was looking for a small grate to put in the charcoal pan to help keep it off the bottom. The problem is I have checked Walmart, Lowes and Home Depot with out any success. Any suggestions? Thanks! -Steven

    Thanks everyone! JimF were your chips soaked? I did that in this next set of chips in hopes it would last longer. I haven't been taking notes, I'm all over the place just trying to not screw up right now lol 2 hours in now and the meat is at 130*, too fast?
