Thanks Sam.  We might try a 60/40 mix.  I am going to use the coarse plate.  It was a nice Striper.  Biggest one I've caught yet and the first I caught out of my own boat... I'll keep you guys updated on the results.

First attempt at ShooterRick's Attitude Brats

My buddy and I are making Shooter Rick's Attitude Brats this afternoon.  I mixed up the recipe last night.  I used NFDM instead of the soy concentrate.  I have a LEM #8 grinder that came with the coarse(3/8") plate and the fine(3/16") plate.  Which one should I use to do the grind the meat? ...

    Curing?

I have been smoking pulled pork, salmon, cheeses, and a few other things for quite a while now.  I would like to venture into making my own sausages, jerky, and bacon.  I have the equipment to do so, but I was wondering what kind of cure to use to make sausage, jerky, and bacon?  What are the...

I finally got around to making this. I made it very similar to the hot giardiniera. I left out the carrots and celery. I used hot hungarian, banana, and bell peppers. Haven't tried it yet. I'll let you know how it turned out.

    Steam Canner?

Do any of use steam canners?  My grandmother just purchased one recently and she loves it.  I've read some positive and negative things about them, but the negatives seem to be just because the government won't approve of them because they haven't really tested them.  I am looking to get into...

    First attempt at Sausage

Thanks for the advice guys.  The recipe calls for Soy protein concentrate.  I can't find it anywhere.  Can I use non fat powdered milk as a substitue and if I can is the ratio 1:1?  Or do I not need to use the soy concentrate at all?

Thanks for the replies guys.  I guess I will just wait and buy the LEM stainless steel grinder eventually.  What model do you reccomend for the amount of use that I am going to be using it for?  The #5 or #8?  Like I said, only 1-2 deer a year and some pork now and then to make brats and...

    First attempt at salmon

I just smoked two batches of salmon this past weekend and it was my first time doing it.  I got the salmon from a coworker in Alaska.  Some of the salmon he gave me had skin on and some of it was skinless.  I'll tell you that it didn't make a differnce in my opionion.  The salmon that was...
