    My first fatty

It was nice enough weather last Friday that I had my first crack at a fatty. Making a fatty is alot easier if you have someone to help, so I have to give a big shout-out to my mom for helping. First, I sauteed some onions, mushrooms, and red bell peppers. Then we got a big mixing bowl and...

    Avoiding excessive smoke

Hi.  Sometimes when I smoke something, I can't taste much smoke flavor, and the rest of the family is overwhelmed by it.  When it's nice out, I like to sit around and babysit the smoker while I drink tasty beverages, so that exposes me to some smoke, which probably desensitizes me to it.  How...

    Chimney volume vs. area

Why is it that the firebox intake and the firebox to cook chamber opening come out in area (sq in), but chimney size is specified in units of volume?  Theoretically, I could get the necessary chimney volume with 3.48 miles of 1/8" copper tubing, but I don't think that would work very well in...

    Putting drippings on charcoal

    Smoking with Weber kettle

I have a Weber 22.5" Silver, and I have two problems: 1. Temp climbs even with bottom vents completely closed 2. Medium white smoke instead of TBS.  (Food tastes great in spite of this, so fixing this is lower priority than #1.) I rather suspect my problems are operator error, so I'll explain...

    Smoking Johnsonvilles

I've grilled brats lots of times, but I'd like to try smoking them.  I did some searching, but there are a couple things I need clarified.  I'll be using "standard" Johnsonville brats: Johnsonville recommends cooking to an internal temp of 160; is that the optimal brat temp?  What if I want...

    Pre-build newb questions

A friend of mine has a 275-gallon home heating oil tank, and we've been thinking about turning it into a smoker. The trouble is we don't really know what we're getting ourselves into, and we don't know how best to configure it for what we want to do. What are we getting ourselves into? - We're...

    Another Michigander

Hi everybody, I live and grew up in the Kalamazoo/Portage area of Michigan.  Allow me to tell you a little bit of my pertinent history... we had a kettle grill when I was a kid, and I loved to grill stuff on it, but eventually its leg mounts gave out and we got rid of it.  We replaced it with a...
