    Sounds as though you hit the "stall" point. Time  and temperature great, assuming your using a decent internal meat thermometer.     I think your idea is great. Have picked up the metal at Lowes, except it was $ 16.95 plus tax here in Canada. Have cut it as you suggested, and hope to use my arc welder in am. to spot weld it together, on a low setting of 80, using # 6013 rod. Hope the arc works ok.

    The spider and adjustable rig are great products. Make sure you have metal handles on the wok when you get around to using it, also, the large lodge cast iron pan fit well on the spider. ed.

    I sure do approve of "clean" ! Its the cook that makes that special que and takes pride when good comments abound. Its the rubs, brines, and care when smoking the product, that the chef imparts to his or her product.

    Trust me Gator, you will be amazed at their performance. If you don't eat it all at one time, vacumn pak it in " one bun size quantities", and freeze. It will keep up to a year. Never know when company comes hungry.

    I've cleaned my bricks with a pressure washer, but would never use that on my smoker, however, a jet of steam is very, very hot, and I have found it to be a very, very effective cleaner for my smokers.
