Why is Franklin BBQ in austin so good?

Franklin uses upper choice, if he can get it. I read that online and emailed him once before and he told me the same thing. See the link below and scroll to the bottom. The pyrimd is what franklin replied with to my email inquiry. https://store.creekstonefarms.com/

    Fan in Offset Smoker?

    I agree with this design.

    Fan in Offset Smoker?

Wait, in all the websites where it shows what mods to do, they all say to do this.  But you disagree?

    Fan in Offset Smoker?

Right, a convection smoker. And remember, it does not have to be a high CFM fan either, just enough to move heat down a little. Plus, no modifications!  And, it would be more efficiant.  You can tune your heat down as the unit is equalized, instead of one hot area and one cooler area, and maybe...

    Fan in Offset Smoker?

Berninga87,  thanks for the input.  First, the fan I was looking for was a slow mover, just enough to pull hot air to the far end of the smoker.  2)  I heard that ceramic was an insulator.  If so, wouldn't it prevent radiant heat and just guide the flow of hot air?  3)  I removed all tuning...

My first time smoking and definitely need of help

Yep.  I also have found that if your tuning plates are too low in realtion to the fire box, that inhibits heat as well.  I had to raise my tuning plates up to let more heat to go where I needed it.  And be aware of where you want the heat to go.  If there is a breeze out side, and you need more...

My first time smoking and definitely need of help

Presuming that your brisket cooked for 6 hours at 150, it would never reach the point where the connective tissue begins to melt.  Also, if you are on a budget, you can try one of these, or actually, two of these, place in different locations on the grill surface.   When you say overdone...

Smoking Grate, Baffle, & Fire Box

I removed all ceramic tuning plates.  The baffle remained but really didn't do much without the tuning plates.  There was no heat equality, however, controlling heat was easy.  I simply placed the food where the heat was right.  Brined cornish hens.  The only thing is maybe next time I will use...

That makes sense.  I'll pick up some 3/16-1/4 steel and try that.

    Fan in Offset Smoker?

The point wasen't neccessarily to circulate the air, just to draw some heat down to where it was needed.  I thought simple air movement, as a side note, may/could help.  But the main goal was near perfect heat equality.  And the fan?  Just a thought.  It could even be mounted on the outside of...

How do you feel about ceramic tuning plates as opposed to heavy guage steel?

    Fan in Offset Smoker?

Sure, I may need some tuning plate tuning.  Someone already mentioned to me that I should remove one of them.  Yes, exhaust is wide open and intake only for temp control.  The tuning plates are porcelain tile.  Also, I did manage to decrease the inequality a bit by raising up my the level where...
