Just bought Masterbuilt Gas Smoker XL

The brisket turned out well. I also did deer steaks, chicken breasts, and some pork. All got rave reviews. It stayed at 225 easily until the end, and it started to rise with the sun beating on it.  I left it in a little too long, it wound up being well done (I was aiming at med rare).  The...

How did you come up with your screen name?

When I started to log in, the volcano in Iceland had erupted, and the flights in Europe were cancelled. The world was watching for the ash cloud to settle down.  I thought it would make for an interesting name.

I at first had a little trouble lighting it up, but it was just a need to get used to the lighting method.  I...

    Cold Smoking

I am a relative newbie to smoking, and I want to try cold smoking.  How can I cold smoke in my Brinkman Gourment Charcoal smoker? I have an electric heat source, (I live in an area that doesn't allow charcoal grills) and I am dying to do cold smoking. I mention the type of smoker so the experts...

    Rollin A Fatty: My Version

This answers some questions I had.  I have only done 2 fatties, but I am hooked on the concept.  Thanks for the info and ideas! One last question, after you roll the fattie, do you refrigerate it for an hour or so?  I was told that it would help set up and prevent a blowout.
