All done!! The wedding was a great success. The smoker ran great and meat was delicious. Our adventure started Thursday night where applied the mustard and rub. We also had to clean up the butts a little since they were pretty fatty. They then went into the fridge overnight. Smoke day started...
Here's the rest of the Qview from the first smoke. I definetly overcooked the ribs but they were still edible and the butts were a tad dry but still good. My mistake was thinking I didnt need to wrap them like I dont need to in the small electric smoker. Lesson learned. Enjoy!
She's finally home (actually shes been home for a few hours)! The butts still had the skin and back fat on so I removed them since I wasnt sure if I was supposed to leave them on or not. Rubbed them down with mustard then cororumrex's dry rub. Starting the charcoal went very smoothly by using...
Stay tuned for the inaugural/test run smoke off! I'm picking up some butts and ribs (Dang ribs are kinda $... $6.99/lb) tonight to smoke tomorrow afternoon so I'll be sure to take lots of picks and post them throughout the day. Going to be using charcoal for the first time, any advice? I wont be...
To no ones surprise... I'm sitting here looking at the finished pics thinking of what I'm going to do to it next. I'm thinking door counterweight and a nice cutting board for the grill and smoker. Maybe I'm not finished yet... Or do these kinds of projects ever truly end?
There it is! Isnt it beautiful!? Picked it up from the blaster today ($60 for grates and everything), painted it (with the much appreciated help from Cororumrex) with some rust-oleum high temp paint, and atttached the gages and the handle. Cant believe I'm finished (for now)! The wedding is on...
I'm pretty sure the orifice was fine... I just opened up the air holes too large trying to get a better burn. It looks like my burner is 6-12" longer than yours which is why I thought my holes needed to be larger than you called out in your thread. I'll double check my orifice though since I did...
ALL DONE! (-)Minus blasting and paint. I got the burner installed on the grill and mounted it to the trailer. Also fixed the inlet baffles which weren't attached very well and removed the stops on the top which arent needed anymore due to the addition of the blue bar. Started adding some mesh...
Wow Monday was HOT!! Got a few small things done. Fab'd the grate and burner for the grill. I got the propane tube burner concept from here. I prefer buying whatever I can from Amazon so I bought this regulator instead. Same specs... 10 psi and 1/8" npt thread orifice (even though it says 1/4")...
Got tons done today! All the major stuff on the main smoker is done. I just need to work on the grill.
-finished installing the reverse flow pan
-fixed crappy welds on bottom rack
-made top rack
-made charcoal basket
-attached main door stop <-- opinions? Does it look weird? I have been...
I was on a pretty good roll this week until the mig welder ran out of shielding gas. I was in the process of installing the rear reverse flow panels and the welds started to spit like crazy. So I just have them tacked in for now. I moved onto some less welding intensive components. Fab'd the...
I think the end is in sight! I think I listed what we had to do yet the other week. I got the front half of the reverse flow pan welded in. It all fit together just as planned. Cut and capped the rusted out end of the grill. And finally started mocking up the shelves and how I want to reenforce...
Balance shouldn't be an issue with the addition of the grill towards the front of the trailer. At least that's what I'm hoping. If we have to move the axle later we could unbolt the smoker and slide the axle back.
Back at it again this morning. Got some odds and ends completed. A new latch for the firebox. I think this one will work much better then the old one (and it was free). Fabricated the baffle for the stack. It can turn to various degrees and even lift up and rest on the stop for rainy days. In...
