    When to remove the wood?

I'm sorry if this was asked already but I could not find any information no matter how much I googled... If I load up the amaze n smoker with saw dust, do i need to remove the amaze n smoker once all the dust turns black, or is it ok? I just don't want to add any soot or bitter flavor to the food

Smoked up some cheese last night. Have a few ???'s

I just smoked my first cheese yesterday. I do not have a vacuum sealer. I tightly wrapped each piece in aluminum foil. Will the cheese get moldy this way if it sits in the fridge for 2 weeks?

Amaze n Smoker sawdust.. "Amaze-n" but expensive...

Thank you for the blender tip, never thought of that :) . And yes, the 'dust' I received from Todd was just very fine chips, not fine dust. I used to use large chips, but the amaze-n-smoker makes smoking 100x easier with light it and forget it constant smoke. Thanks for the suggestion, I have...

Amaze n Smoker sawdust.. "Amaze-n" but expensive...

I purchased an amaze-n-smoker which takes sawdust instead of chips. How do I go about purchasing pure sawdust (example 100% hickory, not mixed with other wood ) The sawdust he sells on his website cost more to ship than it costs to buy them. I don't know of any lumber-mills here - I'm in...

    Smoker Review

Thought I would post my MES review here for those who might want to buy one:   I have always been interested in obtaining a smoker ever since the day I had a smoked Turkey for Thanksgiving. Due to money being tight I have put this in my “one day…” category until I received this years tax...

    MES Temperatures

I'm pretty sure I did get some smoke atleast, the chicken is definitly smokey. I did soak the chips for 30 minutes prior to smoking, so I'm sure there was steam as well. Is there anyone here that still uses the woodchip method rather than the AMNS? I probably will eventually go to the AMNS but...

I thought I read not to put the probes in water, I guess I am mistaken, I will try the boiling water method to verify, thank you. I cooked the bacon wrapped chicken that was in one of the newsletters by Jeff and it came out delicious... Bacon was not crispy though, I guess i should of ran the...

    MES Temperatures

Thanks guys for the info, I just hope  my Maverick is working correctly (defective Probe?) How about the location of the smoker thermometer? I have it dangleing off the top most grill rack. Is that a good spot for it? Right now my MES says 160 my Maverick says 231 and a conventional...

    MES Temperatures

I just got my smoker today and I am currently seasoning it as the instructions say, however the Maverick Remote Thermometer is reading 350 degrees and the MES is reading 270 degrees. Do I have a faulty Controller or is this normal for the first use? I confirmed the remote thermometer...

I have already spent alot of money this month so I will hold off on the Amaze-n-smoker for now - I'm sure once I get...

    New to the smoking game!

This is what I am seeing: http://www.amazenproducts.com/SearchResults.asp?Cat=12   To me, it just looks like a metal grate with dividers, is there more to this than just a grate? edit: Ok So I read up the user manual and I now understand how it works. Will I be able to use a BBQ lighter or does...
