    You ever do smoking before? I did wood and charcoal. This thing surprised me. Enjoy. I am doing some cold smoked Salmon today using the A-MAZE-N, but you can get decent hot smoke results without one. Just easier. This forum is great support.

    If it ain't broke....I find that using chips that are damp but not wet work best.Too dry and that may catch fire.

    No brainer. Retro kit goes in easy, free, works better. A-MAZE-N great tool for cold smoking or if you do not want to feed chips, but unit works fine with chips and retro kit only. Customer service folks are great.

    I used my MES40 with A-Maze-N for a couple of smokes and it did fine. Got A-Maze-N for cold smoking and convenience. Thing Bradley is a bit more money as well for the same size box.

    Cannot disagree. If budget permits, go for the 40". Of course factor sales tax and perhaps shipping but it i s a fine unit. I tell you, I hate stuff made in China, but everything is, and this thing, given the price and country or manufacture, is really decent.

Also got the A-MAZE-N last weekend and it is great for cold smoking, or hot smoking without needing to put in chips every 30 minutes or so, and it is consistent. Very happy...

    I too got one from Sams. Same deal here. Sams said it was the 810, but it was the 211 with remote. Masterbuilt sent retrofit kit when I gave them model and serial number. Great folks. I got A-maze-N last week and frankly it is amazing.

    Well, did not decorate the salmon much - it was pretty good and everyone enjoyed it.Very soft but very falvorful, not too mushy after it was chilled. Will try it again, perhaps with cure first.

    OK. So I did not want to "cook it" and did not want to "cure it", 6 hours in the MES 40 - 100 for 2 hours, 120 for 2 hours, 150 for 2 hours. It seems very soft. Going into the fridge overnight.
