    Thanks to SMF my hobby has taken me from backyard BBQ'er to catering functions of over 50 people from word of mouth alone. I'm from Ontario Canada and don't know if I should consider registering as a business. what else would i require, permits, health inspections etc.... Thanks all.

    So I was following Bear Carvers recipe for Smoked Salmon recipe and instead of brining the salmon for 6 hours as called for I forgot to take it out and left it in all night...15 hours..... Two questions, is my salmon going to be ruined and....... how crucial is it to let it dry to form pellicle...

    Hello all! Ive been poaching on the site for a few weeks now, so I thought I would join the family......Ive been smoking on my gas grill for the last couple years and just purchase an offset barrel smoker, I love it so far, done ribs, chicken, pulled pork and others, all turned out good thanks...
