    Stalled for about 1 - 1/2 hours then picked right back up. From about 164 to 174 now moving up just fine. I used jeff's Texas rub

    Will a 3.5 lb chuck roast stall similar to a park butt. I wrapped it in paper rather than foil like Jeff showed. Just wasn't expecting a stall. Generally what temp does it start and about when does it start rising quicker.

    Best wood. And tips. For smoking red drum and other fish.

    My father-in-law says he always uses Alder Wood for fish. So that's what I use and have never been disappointed. At least try it out sometime. It's nice and light so you don't loose the fish flavor.

    So I did cavity toward the heat and the breast is at 116. And the thigh is at 112. If I get closer to 160 in breast and the thigh isn't there yet any thought on slowing down the breast end. Tent just the breast maybe?

    I Herb butter Brined Turkey, all is going great here. I have a water pan beside the heat and a drip pan with veggies under the Bradley rack with the turkey with cavity facing the heat running about 280 to 315 deg smoker with apple and oak wood chunks and sticks.
