    I run a thermometer on my left side, and I drop one down the center of my lid to get middle temps, they both keep within a few degrees of each other.

    Both, it diffuses the heat, but it also steams the drippings and keeps the drum clean... just pull it out and hose it off.

    I just built a uds and had zero knowledge on how to use it. I took the courses and even bought the sauce and rub recipe. I did a late night smoke of a rack of ribs, and being totally honest with you, it was the best I've ever had. I changed the recipe a little, and will a bit more next time...

    This is my diffuser/drip plate. Its made from 10 gauge that I heated and gave a bit of a contour too so the juices would gravitate to the center instead of into the barrel.     The diffuser isnt needed, but i like it, and yea its a charbroil lid. I had to put in a ring on the inside of my barrel so the lid would fit.

    Yea with the plate on the drum maxed out at about 240, but one cap off and the valve about max, it sat at a steady 210. I like the diffuser, keeps the drum clean, even heat and a nice sizzling sound
