I have only made this sausage once and used hog casings, rated at 35 MM. This worked well for me. Therefore I would recommend:
35-38 MM natural cacasing
32 MM fresh collagen casing

Not new to smoking meat but I am new to this Forum. I have a New Braunfels wood smoker which is totally covered with snow. But the snow does not keep us from enjoying home made fresh sausage on the smoker.
