I used step drill bit slowly, checking several times for a tight fit on each intake. I would like to shore up my intakes as described here on my drum. I was worried about the material of conduit nuts I found at HD.
I love my UDS!
I can only speak from my experience. I originally built a square basket following the idea of the 20/20 thread posted here. I did make a change in the dimension to create a larger volume (created taller sides). I did 2 test burns wanting to confirm I could get the 14+ hour performance...
Is this a different coal basket than what you use in normal UDS mode. Looks like you cut the bottom out of something which retains the coals on the side, and this sits on another grate upon another rack. n00b question, I have never checked the chamber temp of my charcoal grills in the...
This looks very tasty! I would like to try this.
What were the details of the smoke? Temp of chamber, how long, did you pull at specific internal temp?
You are correct sir, this is a fire pit! Kissed a couple meat loafs and a 'pickled' chicken (2 day brine of sugar, salt and prague #1) with some smoke on Sunday. I let my drum run until I had to hit the sack, locked on at ~235* for 11 hours before I shut it down (plenty of fuel left)...full...
Rock on! I have yet to do one yet, I now have the tool (UDS) to minimize the potential of a zombie beer drinking watch. What was total time over smoke?
I am certainly not a guru smoker. However, with the assistance I recieved off of this forum (specifically some patience of one member) I have successfully 'pickled' and smoked several turkeys with great success. I have not tried a chicken yet, soon I guarantee.
I would be interested in this...
Background information.
I had constructed my charcoal basket for my UDS based off of the 20/20 thread found here (great idea btw) http://www.smokingmeatforums.com/for...ad.php?t=89796
I used a larger piece of expanded metal after calculating the volumes of several UDS charcoal baskets found here...
Does it matter if piece is flat or point?
I have never frozen deli meat. Can I freeze pastrami after smoking it? Foodsaver the entire piece or slice and freeze?
Thanks
Thanks to all for the input. I will admit I can get somewhat anal at times, and the initial wide variances on temp differences was giving me a little gas.
I drilled a hole for probes to be introduced, much easier.
I bought a couple 12" turkey fry therms (Outdoor Gourmet from Academy $3.99)...
