    I did order the box insert and hopper lid. I think the shield and drip pan brackets would be nice but I haven’t used a drip pan yet. Ill save up for those down the road.

    Did you get any of those upgraded parts for yours? I see that the inner wall of the fire box is an issue with heat. I believe I am going to get the stainless sleeve from LSS customs to protect it. I love this cooker and like you said it has held temperature pretty steady.

    Picked up some B&B charcoal like you suggested. Today I used the lump coal(mesquite) to do some ribs. The taste was great and this was the best round of ribs since getting the cooker. Used the charcoal along with apple wood for the smoke.

    Tried a jerk chicken cook today on my new charcoal smoker. Set temp at 400 and laid them skin down to get the charring going. To my surprise they blackened up so fast(10 min) so I had to quickly start moving them off of the searing grates. They tasted really good and the juice was great...

    I agree. Right now I am just learning how the smoker reacts to settings and how much wood does the best for ribs. I am not trying to move between different types of meat. Just want to learn ribs and chicken and ease my way along and get these right first. What is TBS?

    The ribs both looked good but the one set did look like too much bark to me. He didn’t get much of a smoke ring he said. Is that because the ribs were hanging vs. laying horizontal? Thanks for the videos.
