First time in about 4 smokes I had trouble maintaining temp. Did some chickens today and got the temp up to about 225 for about an hour and then it dropped off. Added more coal,put on a piece of wood, lots of smoke but not very good heat. Don't know what went wrong today with it.

Today I'm gonna smoke a couple chickens and need a little help. My smoke is coming in from the side under the chickens. Do they need to be in a pan or just on the grate when you do them?
Well I'm giving it a try and have smoked a pork loin and some ribs so far. Pork loin was great but the ribs were a little over done. Here is what I made out of my grill. Darn, it says the pic is too big to upload. Anyone want to see what I made I'll email the pics to you. Thanks-Russ
