See I thought spares were not trimmed anyway. I’ve just never seen a rack this large! Thank you. I mean even the bones are longer than my hand, not saying much, but the smaller ones are closer to slightly larger than a finger.
Hey all, my sister in law brought me some spare ribs today to smoke for her. Now I’m still wet behind the ears, but I’ve never seen a 8lb rack of spare ribs. Should I expect these to be inedible? Why are they so large? Definitely a first for me!

I just cured them for 7 days, I soaked them for an hour but I don’t think it was necessary I won’t next time. I didn’t go with a rub because I put them in Greens and beans. I do plan to do them again especially the turkey and I think a rub would be FANTASTIC!
Man you’re gonna make me a Thanksgiving legend :) thinking of doing some hocks too! Plan to cure them 7 days, dry out in fridge 1 day and then smoke until about 155° internal. Sound good? I’m thinking these for some beans.
Hey guys kind of new to smoking. How long would I smoke turkey wings if I wanted to use them in greens later? I don’t wanna get them perfect on the smoker and then boil them for an hour and ruin them, also not sure when to pull them. Any doneness temp suggestions for this purpose?
