    I believe this is going to be very good. Point poked like butter at 195. Flat was close. Let it go to 200 and seems perfect. I'll know for sure in 6 or 7 hours. I want it now! 😁 Could've shaved the hump down a bit more to keep from pooling, but no matter.

    New to briskets. The overnight cook, while enjoyable to do, can make for a sleepy party host. I'd like to cook during the day before, then rest to 165 and heat overnight+ in oven until time to eat - 4-5pm. Although cook time will vary, I'd like to get resting started by midnight. So hold...

    Just back from vacation... Started at 190 for first three hours. Fed Woodwind smoke box 3 times during, and one last one at the 3 hour mark. Bumped temp to 225. Smoke tube ended up not catching - it was 1230am and wasn't able to check after leaving. Have better idea (torch) to start next...

    Next time I cook, I'll get some pics. The woodwind has a cup underneath fire pot, and when done with cook, you pull bar to empty ash into the cup. The cup fits pretty loosely. This is where some smoke is escaping.
