No, that isn't too dark at all! That looks perfect! And sounds tasty, too! The last couple turkeys I smoked the skin came out almost completely black even though the meat was still super tender and juicy. I will try your method next time and start off at a little lower temperature...
Thanks, Jim. I usually try to clean the smoker after each use. Now I feel really stupid, because I didn't even realize you could smoke without using the water pan. I thought the water pan helped to produce the smoke. I will try removing that next time, too, and see what happens. :-)
Sorry, it would help if I would have put that in my original post. I forgot all about that. I have tried smoking at 230 degrees with the vent wide open and I coated the skin in a barbecue rub. The last time I smoked one, I just put butter and seasonings under the skin. Someone on here...
Thank you! I thought about that, too, just as if I was cooking it in the oven to keep the breast for overcooking, but when I googled it, it said aluminum foil ruins turkey skin when smoking. I will have to try and it and see how it works. Thanks again!

Thanks. That makes sense. It just seems weird to me because it seems like lots of people would like to smoke turkeys over the summer or at least deep dry. I found two turkey breasts at Price Chopper fortunately, but bought the last two they had.

Thank you! I will definitely try that! The first time I tried smoking pork butts, I was doing some research and somewhere else I saw said not to smoke pork butts higher than 225. I did think that seemed awefully low. Taking less time would be awesome!
It has been a crazy couple of weeks and I am just getting to post an update to the meat I smoked for my party. I took everyone's advice and started the two 10lb pork butts Thursday evening. I smoked them at 225 and they took around 21 hours in total. I pulled them at 205 and wrapped them and...
