You really need to think about what you want to run in the house, ie... just certain appliances or a whole house generator. In thinking about that decision you need to get together a load test. Furnace, air fridges...
I agree with cooking down the OEP enchilada sauce. Digging the whole chicken enchilada pizza idea. Now that I'm thinking about it you've given me a thought on chicken quesadillas with enchilada sauce...

I have an LEM #8 500 watt Mighty Brute that has all metal gears and it is a work horse. Definitely get one with metal gears. I want to say I spent 125-150 on mine with the sausage stuffer attachments.. multiple metal die plates as well.
That particular grinder does have a plastic gear attached...
I have a 48 ordered and it should start production build next week hopefully...
Looking forward to it. From what I have read and talked to other 48 owners... For the price it might be the most versatile grill smoker price point and capacity wise on the market.
Start it with 8 briquettes lit and I would move the while charcoal closer to the vent intake end. Have you checked the thermometer in boiling water or ice water for comparison?
I remember another 48 owner saying he removed a washer from the intake and it made a tighter seal to not allow so much...
Been using this cat for 6 months now grilling and smoking. No issues whatsoever. A little getting used to the temp swings, which aren't to bad. Overall a nice smoker
Yea im thinking the same thing.
I had another idea to build an insert of sorts and use the original box as insulation. I think overall it would add to the weight and I'm not sure worth the extra time.
